Sunday Funday w/ Léman Manhattan Prep. School & Children’s Museum of Manhattan

For the second year running, hundreds of families celebrated Sunday Funday with the Children’s Museum of Manhattan on January 31, 2016. CMOM brought together the best in family entertainment, indoor sports and games, creative workshops and fabulous food for the whole family. Children 0 to 12 enjoyed age-appropriate activities from live performances to obstacle courses, sports celebrity appearances to bouncy castles. Infants and toddlers enjoyed soft play areas and sing-alongs, and themed workshops were for all ages by Museum educators. Favorite costume characters, magicians and face painters added to the family fun. 

   The Children’s Museum of Manhattan (CMOM) was founded by families and individuals to create a place of joy and learning for all children. All funds raised at Sunday Funday supported top-notch cultural programming enjoyed by 350,000 people a year, free access to CMOM for over 50,000 low-income individuals a year and outreach programs in over 50 sites in high-need neighborhoods across New York City. 

   

My kids and I were invited by  Léman Manhattan Preparatory School to attend Sunday Funday. The first time my kids and I visited Leman we were invited to a swimming event and we fell in love with the school which is located in the Financial District and serves Pre-K – 12th grade. It is also a boarding school for international students. My son and daughter both want to attend.  

   
    
   
So back to Sunday Funday, we spent an amazing day with lots of parents, kids, celebrities, fun activities and lots of food. The basketball court was where you could find my son and my daughter loves the castle bouncy house. There was so much to do and my kids even decorated their own tote bags at the Léman Manhattan Preparatory School table. Laurie Berkner sung her famous songs for the kids and Prince Amukamara (Giants) made an appearance and did the whip & nae nae and my kids got pictures with him as well. My daughter also enjoyed dancing on stage with the kids pop dance party. Also NBA and WNBA players played basketball and my son got a pic with them too.  

   
Picnic tables added a great touch to the event. Finger sized foods and drinks made it easy for the kids to grab and the ice cream sundae bar was a hit with everyone. Nickelodeon costume characters came out and gave hugs and photos to their fans.

Build-A-Bear Workshop Welcomes Care Bears

 I was invited to see how it all went down at the Empire State Building location. I’ve never experienced the Build-A-Bear Workshop before but was glad to finally get a chance to now that Care Bears joined them.   

  Care Bears have always been one of my favorite stuffed animals. My kids are also fans. I was able to pick out two bears, outfits and accessories, then see how the bears were stuffed, given their beating hearts, a cotton candy and bubble gum scent, theme music and birth certificates. I also received backpacks and the cardboard house that it travels in. Hmm, was I giving these to my daughter or keeping one for myself? Well you should know the answer. She got both. She was very surprised and thankful.

I’ve always loved writing love notes, or just writing in general and I also love writing in calligraphy a skill I learned in high school. Wonderful Pistachios And My Culinary Experience

I recently attended a Culinary Experience with Momtrends and Wonderful Pistachios at My Cooking Party in Chelsea, NYC. Walking into My Cooking Party’s loft was like attending a beautiful wedding reception or fancy Thanksgiving dinner. Everything decorated in white and just looked gorgeous. Our name tags showed us where to sit were placed on the table with Pistachios attached as a souvenir to take home.  

    
    
 The kitchen was so big I wanted to sign a lease to move in. My dream loft, kitchen and appliances all in one. There was also a window that you look directly at the Empire State Building. What a sight to see everyday.  

    
    
  
   
   
   
Cooking is in my blood. I am very passionate about food, recipes, and teaching my kids how to be great cooks/chefs. 

I am a pistachios lover along with other nuts and I was very excited to see how to use pistachios in recipes. Sure, I’ve had other type of nuts in food but never pistachios. I like eating pistachios right out the bag with or without the shells. 

After we were told what we were cooking we washed our hands and headed to our stations. Chefs demonstrated how to use the sharp knives and be careful not to lose any fingers. Picking stations was next. I picked the Spicy Roasted Squash with Wonderful Pistachios. It was very, very delicious. Here is the recipe: 

 *Spicy Roasted Squash with Wonderful Pistachios

Delicata and butternut squash are roasted together with warm spices and a bit of cayenne to heat things up. Crunchy Wonderful Pistachios and maple syrup are just the right additions for texture and sweetness. Garnished with pomegranate arils this dish is a celebration of flavors.

Prep: 18 minutes / Time to Table: 38 minutes / Serves: 8 (about 10 pieces of squash/person; about a cup/person)

 

1 ½ pounds butternut squash (4 ½ cups prepped)

2 ½ pounds delicata squash

1 teaspoon ground cinnamon

½ teaspoon ground allspice

¼ teaspoon ground cayenne

1 teaspoon salt

1 tablespoon unsalted butter

2 tablespoons olive oil

½ cup shelled Wonderful Pistachios Roasted & Salted, chopped

2 tablespoons maple syrup

¼ cup POM Wonderful pomegranate arils

2 tablespoons chopped flat-leaf parsley

 

1. Heat oven to 425°F. Line two baking sheets with aluminum foil.

2. Peel and seed butternut squash. Cut in half lengthwise and slice into ½ inch thick pieces. Cut in half again for quarters.

3. Cut delicata in half lengthwise and seed. Cut into ½ inch thick slices. Combine all the squash in a large mixing bowl.

4. Sprinkle the cinnamon, allspice, cayenne and salt over the squash. Mix thoroughly.

5. Melt the butter and stir into the olive oil. Drizzle over the spiced squash and mix thoroughly.

6. Transfer the squash to the baking sheets, arranging in a single layer. Bake for 15 minutes.

7. Stir and flip squash. Sprinkle with Wonderful Pistachios and drizzle with maple syrup. Bake another 5 to 7 minutes until pistachios are just toasted. Remove from the oven.

8. Arrange on a serving platter and sprinkle pomegranate arils over the squash. Garnish with chopped parsley.

2. Turkey Roulade with Wonderful Pistachio Pesto

3. Roasted Sweet Potato Wedges with Wonderful Pistachios, Goat Cheese and Pomegranate Glaze

4. Wonderful Pistachio and Cherry Popcorn Balls

5. Wonderful Pistachio Chocolate Brownie Cookies

6. Wonderful Pistachio Holiday Palettes

Here is one more recipe: 

Turkey Roulade with Wonderful Pistachio Pesto
Pistachios, apples and onions are stuffed in this impressive, but easy main course. A nutty Wonderful Pistachio pesto is the perfect accompaniment.

Prep: 1 hour 15 minutes / Time to Table: 2 hours 30 minutes / Serves: 6 to 8

 

Wonderful Pistachio Pesto:    

1½ cups baby spinach (about 2½ ounces)

1 cup shelled Wonderful Pistachios

2 large cloves garlic

¼ teaspoon salt

¼ teaspoon pepper

¾ cup olive oil

 

Turkey Roulade:

½ cup dried cranberries

4 tablespoons olive oil, divided

1 yellow onion, diced into ¼-inch pieces (about 1½ cups)

1 granny smith apple, cored, and cut into ½-inch pieces (about 1 2/3 cups)

2 cups low-sodium chicken broth

4 teaspoons fresh thyme

5 teaspoons fresh rosemary

¾ teaspoon salt, divided

½ teaspoon ground black pepper, divided

3 ounces day- old french bread, cut or torn into 1-inch pieces (about 1¾ cups)

¾ cup shelled Wonderful Pistachios, toasted, and roughly chopped

1 skinless, boneless, turkey breast half, butterflied (about 2½ lbs)

3 small red onions, cut into wedges

 

1. To make the pesto, place spinach, pistachios, garlic, salt and pepper in the bowl of a food processor. Slowly pour in oil, while machine is running, about 20 seconds. Pulse to completely combine. Set aside in the refrigerator, up to one day ahead.

2. To make turkey roulade, position oven rack in the center and heat oven to 375°F. Place cranberries in a small bowl and cover with boiling water. Let sit for 5 minutes until softened. Drain and set aside.

3. Meanwhile, heat 1 tablespoon of oil in a medium skillet on medium heat. Add onion and cook 5 to 7 minutes until softened. Add apple; continue to cook, 5 to 7 minutes, until onion and apples are golden. Add ½ cup chicken broth, thyme, rosemary, ½ teaspoon salt and ¼ teaspoons pepper, and simmer. Stirring occasionally and scraping up any bits that stick to the bottom of the pan, about 5 minutes, until broth is absorbed and apples are softened. Transfer to a large bowl.

4. Add bread and cranberries to apples and stir to combine. Pour in ⅓ cup chicken broth and stir to combine. Add additional 2 tablespoons chicken broth, as needed, until bread is moist, but not wet. Stir in pistachios and set aside to cool.

5. Place turkey between sheets of plastic wrap, and pound with a meat mallet or rolling pin, to about ½-inch thick. Season each side with remaining ¼ teaspoons salt and ¼ teaspoons pepper. Place turkey, skinned side down on working surface. Spread stuffing over turkey leaving a border uncovered, about 1½-inches all around. Roll up and secure tightly with kitchen twine.

6. Heat a roasting pan (or large skillet), with 2 tablespoons olive oil, on medium to medium-high heat. Brown turkey roulade on all sides, 12 to 15 minutes. Set aside on a plate. Add wire rack to roasting pan and place turkey on rack. Combine onion wedges in a bowl with 1 tablespoons oil and place in roasting pan alongside turkey. Add ½ cup chicken broth to roasting pan and place in oven.

7. Cook for 1 hour and 15 minutes, until turkey temperature reaches 165°F. Remove from oven, transfer to a cutting board and tent with foil. Allow to rest 10 to 15 minutes, until juices have had time to absorb, before cutting into 6 to 8 slices.

8. Meanwhile, add remaining chicken broth (about ½ cup) to roasting pan, and scrape up any bits with a wooden spoon. Serve pan drippings alongside turkey with pistachio pesto.

Pressure Cooker XL Review

My mouth dropped when I saw how fast and easy it was when he made macaroni and cheese with shredded turkey. It only took 10 minutes. Yes!!! He also made risotto. I’ve never attempted to make risotto because you can’t leave that pot for a minute but now I can.The risotto came out delicious. Did I tell you it can also cook a turkey? Yes a 10-11 pound turkey. When meat is juicy and falls off the bone you know you’re doing something right. Butternut Squash was also made and I can’t believe how easy it was.  

 I’ve always wanted a Pressure Cooker XL but thought it was do difficult to use. If I knew it was this easy and cooked food as quickly as it does I would have been purchased one. I was so excited that tge first meal I made was curry chicken and rice. It was amazing!!! Once again meat falling off the bones. The whole family devoured that. The next thing on my list was macaroni and cheese. The cheesier, the better. This also turned out great and we were very happy that it was fine in 10 minutes. Just put everything in the Pressure Cooker XL and that’s it!

Food Network Magazine Holiday Party Recap

Food Network Magazine held their holiday party at the Hearst Tower in NYC hosted by Food Network’s very own chef Anne Burrell. I am a big fan of Anne and was honored to finally meet her. You probably know I am a Food Network fanatic and have met quite a few chefs and hope to continue meeting more. I enjoy cooking and creating recipes so I was very excited for this event.  

   
The 44th floor of the Hearst Tower looked amazing. Hors d’oeuvres were passed and bars were fully stocked. On the menu were: Boneless Chicken Wings presented by Dean’s Dip, Mushroom Truffles in Phyllo Shells, Finochhi Gratinati on Grilled Crostini presented by the Italian Trade Comission and Prosciutto Persimmon Antipasti. 

Drinks were sponsored from Puerto Rico Rum and Stella Artois. Signature cocktails were amazing. Pompeian Extra Virgin Olive Oil was served with fresh bread. Variety of cookies and coffee was also served.

I look forward to Momtrends Holiday parties every year. A few hours of fun with friends, food, fashion show and brands showing us what we absolutely must have this holiday season. 

Walking into the event was filled with beautiful fresh Teleflora flowers. It was like Winter Wonderland. I’ve always enjoyed having a Teleflora arrangement in my house. What I love is you can get flowers for any occasion. It brings out my surroundings on the table and my guests enjoy seeing what new arrangement I ordered.  

 POM juice is amazing. I was shocked when I found out the incredible flavors of juices/teas they have. I was really in shock when I tasted the appetizers that had pomegranate added. The Lamb Meatballs and Pom-Mint Relish and the Pom Guacamole served with tortilla and plantain chips were very good. There were also cocktails like the Pom Mimosa Mocktail and Sparkling Wine with Pom Wonderful Arils. The Pomegranate Peach Passion Tea was my favorite but I would drink them all. My kids enjoyed them as well.  

    
 Igloo Coolers and products are a must have. If you tailgate and party and don’t own the igloo brand then you need to get to a store and pick some up. The Igloo Party Bar is on my wish list. It features an exclusive LiddUp LED light system so when your party goes into the night guests can easily find their drinks. It runs on 4 AA batteries and have removable dividers. Also loved the thermal tote bags and took home in our swag bag the sports 1/2 gallon beverage cooler with hooks. Also the kids lunch bags were a hit and I appreciate Igloo thinking of them as well. There’s also a 45 can ultra collegiate cooler. 

 Family owned Tessemae’s brought along their all natural, healthy condiments. When I first heard of Tessemae’s I tried their ketchup at a kids food festival and immediately purchased a few bottles. This time I was impressed with their salad dressings, marinades, sauces and mayonnaise. Everything was delicious. 

   
Momtrends surprised someone special with a gift for dedicating six years of hard work, writing posts and being a supporter and attendee at all of their events. Who was it? Oh that would be me. I was in total shock and very happy to be recognized and receive an incredible gift. No words can express how I felt and was so grateful and honored. Thank you so much. You made my night and I am blessed to have Momtrends in my life. xoxo.
