Strawberry And Cream Cheese Crepes/RollUps 

Ingredients:

1 Box of Krusteaz Buttermilk Protein Pancake Mix (follow instruction on box) 

I package strawberries 

1 container of Philadelphia whipped cream cheese

Instructions:

Make pancakes according to box. The blender bottle was a great help with mixing, pouring and cleanup. It’s all I use now. 

Cut up strawberries in circles or whatever shape you want.

After pancakes are done, let them cool the spread whipped cream cheese on pancake, add strawberries then roll up. That’s all folks!! You can also get fancy and add syrup or confectioners sugar or even BACON!!!!

SUNDAY SKILLET FRITTATA WITH NELLIE’S EGGS & CABOT CHEESE #NelliesBrunch #AD

It’s nearly indisputable that Sunday brunch is the best meal of the week, and what is brunch without eggs? 

Nellie’s Free Range Eggs come from the first Certified Humane farm in the country where the hens have as much, or as little, access to outside as they want.

Nellie’s Free Range Eggs and Cabot Creamery Co-operative Cheese asked me to come up with a brunch recipe using these two stellar brands. 

We love eggs no matter what time of day. There’s so many ways eggs can be used. I must say I can’t have eggs without cheese unless I’m baking or making pancakes or waffles. We are cheese fanatics and you know cheese go great with lots of things. 

The farm families that own Cabot Creamery Co-operative love what they do. And they’ve been doing it for a long time—every single day since 1919. 

I love my eggs very cheesy, scrambled eggs, omelets, etc. For my brunch I decided to create a one pot frittata type of egg recipe. 

SUNDAY SKILLET FRITTATA WITH NELLIE’S EGGS & CABOT CHEESE

INGREDIENTS:

 Nellie’s Free Range Eggs 6 or 7 eggs depending on size of pan and amount of people you’re feeding. ( I fed 6 people) 

**Cabot Cheese Legacy Collection Alpine Cheddar Cheese (you decide how much to put in) just cut up in pieces

**Cabot Cheese Gatlic and Herb Cheddar Cheese

**Cabot Cheese Seriously Sharp Premium Naturaly Aged Cheddar Cheese 

**You can use whatever flavor cheese you want. 

1 Red Bell Pepper chopped up 

1 Orange Bell Pepper chopped up 

2 Whole Tomatoes chopped up 

2 whole onions

I used garlic powder, onion powder and salt & pepper. 

PREP:

In my nonstick skillet I cracked 6 to 7 eggs. My daughter whisked them up. My veggies and cheese were already choppep. I added them inside the egg mixture with my seasonings and stirred it up. 

My oven was already preheated to 350 degrees. (Check your oven for your right temperature). You don’t want the frittata to burn before it can cook all the way through. 

Yes, skillets can go in the oven. I tried to avoid opening the oven too much because that slows down the cooking process. It took roughly 45 minutes to an hour. Cooked to perfection. It was well worth the wait. Everyone enjoyed it and I can say that will be a part of our breakfast/ brunch or dinner quite often. It can also be put on bread and made into a sandwich. My daughter did that.

Pomegranate season is in full effect and POM Wonderful and Momtrends invited me to a hands on cooking experience to make and try delicious recipes made with fresh pomegranate arils and juice. I headed to the Miette Culinary Studio to cook with professional chefs. Looking for new recipes for the holidays?

Alex White, Research & Developmemt Manager, Chef and professional tea taster started of the evening talking about his profession as a tea taster and the process of the teas. The process of how teas are picked at their freshest, rolled to preserve their freshness, chopped and dried for the most balanced aromas, then the leaves are blended by tea masters to ensure consistent taste. He also explained the difference between the cold ice teas and the hot. 

Laura Maniec, World’s youngest female Master Sommelier and owner of Corkbuzz Wine Studio spoke to us about the similarities of wine and tea. The same language you use to describe wine you also use to describe tea. The raspberry and peach tea is like Pinot Noir wine.

I tried a variety of samples at the event and enjoyed them. I am a big Chai Tea fan so that was one of my favorites. 

Lisa Boalt Richardson, Certified Tea Specialist and author of “Modern Tea: A Fresh Look At An Ancient Beverage” and “Tea With A Twist: Entertaining and Cooking With Tea” took us on a journey around the world to India, Kenya, Indonesia and Sri Lanka. 

Did you know that Chai means Tea? So when you ask for a Chai tea you’re just saying ” Can I have a tea, tea?” I found that interesting and funny. In Kenya you will be served tea all day long so you have to politely say that’s enough if you don’t want anymore. Also, in Kenya the bigger the cup the better. If they serve you in a big cup you’re considered a guest. Indonesia has 17,000 islands. It would take me forever to visit all of them. Sri Lanka is located off the southeastern coast of India. A former British colony, Sri Lanka was called Ceylon before it became a republic and took on a new name in 1972. For almost one hundred years before that Sri Lanka produced the commodity it’s best known for today – a black tea that’s still referred to as Ceylon. A boy or young man who serves tea in India is called Chaiwala or Chai Wallah. They are everywhere in India, from busy urban street corners to hidden alleyways, at bus depots and railway platforms and walking through the train cars, along riversides and on footpaths when you need a fresh cup of tea, the chai wallah is always near.

Daphne Oz talked about how she loves her “Me Time” with a hot cup of tea. There’s something about tea that just relaxes you and the aromas just make the experience that more calming. Daphne also talked about her two children, spending time with her family members, cooking for the holidays and how you can cook delicious but easy, fast dishes so you can also spend time with your family. She also talked about staples to keep in your kitchen, seasonings, and how to prepare the juiciest Turkey for Thanksgiving using a cheesecloth, fresh herbs and butter. Yes I will attempt that this year.  Her recipes in her cookbook I will definitely be taking advantage of because I love cooking and trying new things. Daphne brought her Blueberey Tea Cake to the event and you talking about the moistest cake ever. I wanted to take it all with me. It was very good. Copies of her new cookbook “The Happy Cook” was in our gift bag along with Pure Leaf Teas and other goodies. 

I learned so much about the process of teas and listening to the experts. I really enjoyed myself and taking a journey. It was as if I went on a vacation and came back an expert in teas myself . 

Here is the recipe of Daphne’s Blueberry Tea Cake: 

Blueberry Tea Cake

Pairs with Pure Leaf Black Tea with Vanilla

Makes one 9-inch square cake
2 sticks (8 ounces) plus 1 tablespoon unsalted butter, at room temperature

21/2 cups all-purpose flour

2/3 cup packed light brown sugar

Kosher salt

1/2 teaspoon baking powder

1/4 teaspoon baking soda

3/4 cup sour cream

2 tablespoons fresh lemon juice

3/4 cup granulated sugar

3 large eggs

2 teaspoons pure vanilla extract

2 cups fresh or frozen blueberries

 

Preheat the oven to 350°F. Grease a 9-inch square cake pan with 1/2 tablespoon of the butter, lay down two sheets of parchment paper perpendicular to each other, leaving overhang to use as tabs to lift the cake out when it is cooked, and grease again with another 1/2 tablespoon butter.

 

To make the streusel, in a medium bowl, whisk together 11/4 cups of the flour, 1/3 cup of the brown sugar, and a pinch of salt. Melt 6 tablespoons of the butter in the microwave. Drizzle in the melted butter and use a fork to stir the mixture together until large streusel-like crumbs form. Set the streusel aside.

 

To make the batter, in a large bowl, whisk together the remaining 11/4 cups of the flour, the baking powder, baking soda, and 1 teaspoon salt. Set aside.

 

In a small bowl, stir together the sour cream and lemon juice. Set aside.

 

In a stand mixer fitted with the paddle attachment, combine the granulated sugar and the remaining 1/3 cup brown sugar and 10 tablespoons butter and cream on low speed until the mixture is combined. Increase the speed to medium-high and cream until the butter is airy, about 2 minutes. Reduce the speed to medium and add the eggs one at a time, beating well and scraping the sides and bottom of the bowl as needed between each addition. Add the vanilla and beat to combine.

Reduce the speed to medium-low and add half the reserved flour mixture, then the sour cream mixture, then the rest of the flour mixture, mixing until combined and scraping down the bowl as needed. Remove the bowl from the stand and fold in the blueberries

 

Scrape the mixture into the prepared baking dish. Top evenly with the streusel and bake for 1 hour to 1 hour and 15 minutes, until a cake tester inserted into the center of the cake comes out with just a crumb or two attached. The top will be a rich golden brown under the streusel, and the cake will give springy resistance to pressure.

 

Use the parchment paper to remove the cake from the pan, then discard and cool the cake completely on a wire rack. Cut into squares and serve, or cover with a dome or plastic wrap for up to 3 days (though there’s no chance it lasts that long in your kitchen).

 

Tip: This batter works very nicely in a muffin tin, a loaf pan, or practically any baking dish. The cook time will vary depending on whether you use a dark coated pan, cast iron, or glass dish, so just keep an eye out for the golden brown top and springy texture to make sure you don’t overcook.

I created a recipe for Beer Brats Turkey Chili Dogs that can be cooked in your slow cooker. 

What you’ll need:

*1 large slow cooker

*Johnsonville Brats ( I used beef and beer brats)

*3-4 cans (12 ounces) beer ( I used 1 (24 ounce) can

*1 medium yellow or white onion, sliced into rings ( I used lots of onions & a red onion as well)

*1 large green pepper

*1 large red pepper

*2 (15 oz.) cans turkey chili with beans

*Jalapeños to top

*Mustard

*Potato rolls

What to do:

*Pour in the beer, add butter, peppers, onions and turn slow cooker on high

*Heat a grill pan or heavy skillet to medium high and grill or sear the brats on all sides until fully cooked when internal temperature reaches 160F.

*Add your Johnsonville Brats to the slow cooker and heat till brats are cooked about 2 hours.

*Reduce heat to low to keep the brats hot throughout the game.

*Heat chili as instructed on can

*Open a potato roll, add brats and onion mixture then top with chili, jalapeños and mustard.

*Enjoy!!

Below I made a recipe with Wellsley Farms Shrimp found at BJ’s. I added a stir fry mix to it that has corn, peppers, onions, and broccoli and served over mini tater tots. Served with mini size Martinelli Sparkling Apple Cider. These are great for the kids and adults.

Insights on America’s Tailgating Habits

Survey shows Buffalo wings rule, and a team’s loss can affect tailgaters for the whole week  

Westborough, MA (September 7, 2016) – Break out the face paint, a funny wig or team jersey,
football season is here and that means it’s time to tailgate. New research from BJ’s Wholesale
Club tackles the question of America’s tailgating habits, showing that for almost half of Americans (45%) tailgating is more important than the game. And 60% of us are diehard
tailgaters, showing up for the pre-game party rain, sleet, snow or shine.  

According to an online survey conducted by BJ’s Wholesale Club of 1,001 tailgaters on the East
Coast, when it comes to sandwiches, burgers (49%) are the clear winner among pre-game
partiers, followed by pulled pork (24%) and hotdogs (21%). And according to the research, the most important item for a tailgate is the cooler and ice (71%), followed by the grill (57%). The most forgotten items are bug spray (15%), with sunscreen 11% and trash bags 10% a close second and third.

But for some tailgating comes with a downside. About forty-percent of fans say a loss by a
favorite team affects them all week but there’s always another tailgate to look forward to.  

Key survey findings reveal:

Planner or a moocher?  

*Half of tailgaters say they are planners. Two in five prefer to wing it, putting things together at the last minute. While one in ten are moochers, just waiting to enjoy what the planners bring.  

*Almost half of tailgaters say they would have no problem tailgating and not attending a
game.

*Three to four hours before is when over three in five tailgaters start. 

Most popular foods

 Overall, appetizers and wings are the favorite foods.
 For over half of tailgaters (56%), it’s got to be Buffalo-style wings followed by barbeque
at 44%. 

 Beer is the beverage of choice for 73% of tailgaters and almost half say they also need
soft drinks/soda (49%) and water (48%).

Tailgating Type:

* Thirty-seven percent of tailgaters say they are diehard fans because when their team
loses, they feel lost all week.

* Three in five (60%) tailgaters throw the football around while over half (53%) prefer to
play cornhole.

* One-third (34%) find professional football games more fun for tailgating, one-third
(33%) say college games are more fun, and one-third (34%) say both are equally as fun!

And finally, when it comes to showing spirit, most tailgaters go with a team jersey (82%), while
13% choose face paint and 5% pick body paint. Only 2% opt to wear a team wig.

In collaboration with Regina Corso Consulting, BJ’s Wholesale Club surveyed more than 1,000
tailgaters in its 15-state footprint. Participants were adults, 18 and older, with male
respondents making up 58% and 42% female. Surveyors live primarily in suburban settings and
have achieved a college degree. This survey was conducted between August 2 and 9, 2016.

Back To School Sandwiches With @BJsWholesale #shoptheclub #ad

National Sandwich Month is coming to an end but that doesn’t mean we can’t enjoy sandwiches whenever we want. 

Back To School is approaching very fast and my kids know what type of lunches they want to take to school. When it comes to sandwiches they are only picky about the types of meat they eat.  

A morning breakfast sandwich could be bacon, egg and cheese or a grilled cheese sandwich but a deli sandwich has to be honey glazed or regular turkey. 

Since I’ll be preparing lunches for two kids I’m depending on BJ’s Wholesale to give me the great selection and meats, cheeses, breads, produce and condiments I need. 

My daughter who’s going to 4th grade will probably be the one who will use cookie cutters and make cute faces for her food. (As she did below) My son who is going to 8th grade just wants a meal. He’s not into all the cute lunches. 


I love pre-sliced cheeses. No cutting or slicing just take out of package, put on bread and that’s it. Wellsley  Farms has a variety of cheeses to choose from. Pepper Jack, Provolone, Sharp Cheddar and Muenster are on the top of our list.

Deli meat is Turkey like I mentioned earlier. You can purchased from the deli department by the pound or packaged deli meats. I love Wellsley Farms brand and I think I’m going back to Chicken Breast which is also good. I’ll still but Turkey but I want to eat chicken again. I also want to try buffalo chicken as well. I love spicy food. My kids also love spicy. 

So for back to school cold sandwiches hold better for my kids and when they get home they enjoy grilled cheese or panini sandwiches. No matter what type BJ’s has it all. Here are my grilled cheese and panini versions I made before. Grilled cheese doesn’t have to be just cheese I made a turkey, cheese, peppers and onions. The kids also loved the panini grilled cheese and the triple decker grilled cheese.
