Follow directions on box for the rice. You can choose whatever vegetables you like but these are what I picked. 

Onions

Peppers

Mushrooms

Celery

Broccoli

Cauliflower 

Zucchini 

Carrots

Red cabbage 

After stir frying veggies I made a sauce to go on top and created a more Asian flare. Here is the sauce I created. 

Cumin

Ginger

Honey

Soy sauce

Rice vinegar

Garlic in oil

Thai paste (red curry)

Salt

Pepper

I didn’t measure any of the ingredients for the sauce so just be sure to taste as you go. I enjoyed making this dish and my family enjoyed eating it. This meal was made in no time and can be used as a main or side dish.

Wonderful Pistachios And My Culinary Experience

I recently attended a Culinary Experience with Momtrends and Wonderful Pistachios at My Cooking Party in Chelsea, NYC. Walking into My Cooking Party’s loft was like attending a beautiful wedding reception or fancy Thanksgiving dinner. Everything decorated in white and just looked gorgeous. Our name tags showed us where to sit were placed on the table with Pistachios attached as a souvenir to take home.  

    
    
 The kitchen was so big I wanted to sign a lease to move in. My dream loft, kitchen and appliances all in one. There was also a window that you look directly at the Empire State Building. What a sight to see everyday.  

    
    
  
   
   
   
Cooking is in my blood. I am very passionate about food, recipes, and teaching my kids how to be great cooks/chefs. 

I am a pistachios lover along with other nuts and I was very excited to see how to use pistachios in recipes. Sure, I’ve had other type of nuts in food but never pistachios. I like eating pistachios right out the bag with or without the shells. 

After we were told what we were cooking we washed our hands and headed to our stations. Chefs demonstrated how to use the sharp knives and be careful not to lose any fingers. Picking stations was next. I picked the Spicy Roasted Squash with Wonderful Pistachios. It was very, very delicious. Here is the recipe: 

 *Spicy Roasted Squash with Wonderful Pistachios

Delicata and butternut squash are roasted together with warm spices and a bit of cayenne to heat things up. Crunchy Wonderful Pistachios and maple syrup are just the right additions for texture and sweetness. Garnished with pomegranate arils this dish is a celebration of flavors.

Prep: 18 minutes / Time to Table: 38 minutes / Serves: 8 (about 10 pieces of squash/person; about a cup/person)

 

1 ½ pounds butternut squash (4 ½ cups prepped)

2 ½ pounds delicata squash

1 teaspoon ground cinnamon

½ teaspoon ground allspice

¼ teaspoon ground cayenne

1 teaspoon salt

1 tablespoon unsalted butter

2 tablespoons olive oil

½ cup shelled Wonderful Pistachios Roasted & Salted, chopped

2 tablespoons maple syrup

¼ cup POM Wonderful pomegranate arils

2 tablespoons chopped flat-leaf parsley

 

1. Heat oven to 425°F. Line two baking sheets with aluminum foil.

2. Peel and seed butternut squash. Cut in half lengthwise and slice into ½ inch thick pieces. Cut in half again for quarters.

3. Cut delicata in half lengthwise and seed. Cut into ½ inch thick slices. Combine all the squash in a large mixing bowl.

4. Sprinkle the cinnamon, allspice, cayenne and salt over the squash. Mix thoroughly.

5. Melt the butter and stir into the olive oil. Drizzle over the spiced squash and mix thoroughly.

6. Transfer the squash to the baking sheets, arranging in a single layer. Bake for 15 minutes.

7. Stir and flip squash. Sprinkle with Wonderful Pistachios and drizzle with maple syrup. Bake another 5 to 7 minutes until pistachios are just toasted. Remove from the oven.

8. Arrange on a serving platter and sprinkle pomegranate arils over the squash. Garnish with chopped parsley.

Here is one more recipe: 

Turkey Roulade with Wonderful Pistachio Pesto
Pistachios, apples and onions are stuffed in this impressive, but easy main course. A nutty Wonderful Pistachio pesto is the perfect accompaniment.

Prep: 1 hour 15 minutes / Time to Table: 2 hours 30 minutes / Serves: 6 to 8

 

Wonderful Pistachio Pesto:    

1½ cups baby spinach (about 2½ ounces)

1 cup shelled Wonderful Pistachios

2 large cloves garlic

¼ teaspoon salt

¼ teaspoon pepper

¾ cup olive oil

 

Turkey Roulade:

½ cup dried cranberries

4 tablespoons olive oil, divided

1 yellow onion, diced into ¼-inch pieces (about 1½ cups)

1 granny smith apple, cored, and cut into ½-inch pieces (about 1 2/3 cups)

2 cups low-sodium chicken broth

4 teaspoons fresh thyme

5 teaspoons fresh rosemary

¾ teaspoon salt, divided

½ teaspoon ground black pepper, divided

3 ounces day- old french bread, cut or torn into 1-inch pieces (about 1¾ cups)

¾ cup shelled Wonderful Pistachios, toasted, and roughly chopped

1 skinless, boneless, turkey breast half, butterflied (about 2½ lbs)

3 small red onions, cut into wedges

 

1. To make the pesto, place spinach, pistachios, garlic, salt and pepper in the bowl of a food processor. Slowly pour in oil, while machine is running, about 20 seconds. Pulse to completely combine. Set aside in the refrigerator, up to one day ahead.

2. To make turkey roulade, position oven rack in the center and heat oven to 375°F. Place cranberries in a small bowl and cover with boiling water. Let sit for 5 minutes until softened. Drain and set aside.

3. Meanwhile, heat 1 tablespoon of oil in a medium skillet on medium heat. Add onion and cook 5 to 7 minutes until softened. Add apple; continue to cook, 5 to 7 minutes, until onion and apples are golden. Add ½ cup chicken broth, thyme, rosemary, ½ teaspoon salt and ¼ teaspoons pepper, and simmer. Stirring occasionally and scraping up any bits that stick to the bottom of the pan, about 5 minutes, until broth is absorbed and apples are softened. Transfer to a large bowl.

4. Add bread and cranberries to apples and stir to combine. Pour in ⅓ cup chicken broth and stir to combine. Add additional 2 tablespoons chicken broth, as needed, until bread is moist, but not wet. Stir in pistachios and set aside to cool.

5. Place turkey between sheets of plastic wrap, and pound with a meat mallet or rolling pin, to about ½-inch thick. Season each side with remaining ¼ teaspoons salt and ¼ teaspoons pepper. Place turkey, skinned side down on working surface. Spread stuffing over turkey leaving a border uncovered, about 1½-inches all around. Roll up and secure tightly with kitchen twine.

6. Heat a roasting pan (or large skillet), with 2 tablespoons olive oil, on medium to medium-high heat. Brown turkey roulade on all sides, 12 to 15 minutes. Set aside on a plate. Add wire rack to roasting pan and place turkey on rack. Combine onion wedges in a bowl with 1 tablespoons oil and place in roasting pan alongside turkey. Add ½ cup chicken broth to roasting pan and place in oven.

7. Cook for 1 hour and 15 minutes, until turkey temperature reaches 165°F. Remove from oven, transfer to a cutting board and tent with foil. Allow to rest 10 to 15 minutes, until juices have had time to absorb, before cutting into 6 to 8 slices.

8. Meanwhile, add remaining chicken broth (about ½ cup) to roasting pan, and scrape up any bits with a wooden spoon. Serve pan drippings alongside turkey with pistachio pesto.

T.J. will be a teenager next year so some of the rules will diminish as he shows more responsibility. After agreeing on healthy limits together, a personalized, official family agreement can be stored on the computer or printed and posted at home. We printed ours out and will hang it on the refrigerator.

First Time Walking Across Brooklyn Bridge Using Runkeeper App

Momtrends and Runkeeper (health & fitness app) teamed up together to invite a few bloggers to run/walk across the Brooklyn Bridge. I’ve always wanted to walk across the Brooklyn Bridge but never got around to doing it so I said this would be a great time to scratch this off my bucket list and get fit at the same time with a bunch of colleagues. I also wanted to use the new & improved Runkeeper app and track my status. 

We met Thursday morning in Brooklyn in our baby blue Runkeeper t-shirts and with my iced coffee in hand some of us ran and some walked across the bridge. I also periscoped some of my journey. You know if you’re walking with someone and talking and taking pics it doesn’t seem as far as you think. I just walked from one borough to another and back again. How cool was that? 

I have my Runkeeper app hooked up to my Spotify so I could hear music but I was acting like a tourist in my own city that I didn’t even have time to listen to my music. The Runkeeper app tracks your workout in real time and let other runners become your running buddy and we could see each other’s progress and also check your running history. It’s a cool app. It also has GPS. 

After our run/walk we headed to Almar restaurant in Brooklyn (Dumbo) for lunch. It was great. We were given a gift bag with goodies and I felt good. I think I will walk the bridge again. This time I will do it with my kids.

Ditch the bulky colander in favor of a paper towel. Place veggies and fruit on a sheet of Viva® Vantage® paper towels under a running faucet to function as a strainer; the stretchy-strength will keep the towel intact when wet. 

Need to chill white wine quickly? Don’t dilute it with ice; wrap a damp paper towel around the bottle and put in the freezer to chill rapidly.

Shopping at Target Just Got Easier: Curbside Pickup

Ever been running around doing errands all day wishing you didn’t have to park, get out of the car, unstrap your little one from the backseat and then go in and face the crowds and long checkout lines?

With Curbside, a new mobile app that allows shoppers to order from Target from their phone and swing by the store to pick up their order without having to get out of the car, those days are gone. Yep, their goods are waiting for them by the curb when they arrive (hence the name Curbside).
The Curbside app is free, there’s no mark up in pricing and shoppers no longer have to battle the parking wars, the mob scene finding items on shelves and the never-ending checkout lines. It’ll make running errands and doing your upcoming holiday shopping about as easy as possible!
Curbside launched first in the Bay Area to the delight of shoppers on the go and it’s now available in New York and New Jersey!

I was asked to test out this service and downloaded the app. The app was very easy to use. I went to the Target in the Beonx because my local Target doesn’t have this service yet. I ordered a few things and the app said it would be ready in an hour. By the time I arrived I still had about a half an hour till the delivery. I started getting emails and texts saying my order changed. Some things I ordered weren’t available. I waited then received a text letting me know my order was ready. I saw the Target employee with blue bags in her hand and knew those were mine. We went over the list together and everything checked out. However, there was one thing I came all the way to the Bronx to get that I really wanted because I was flying out the next day and called Curbside customer service and explained and everything was resolved and I got what I needed. 

Curbside customer service was great. 

App is easy to use. 

Hope they set up in my local Target so I don’t have to travel to Bronx.

Smashburger’s New Better For You Kids Meal

After a fun day at an event with my kids I surprised them by taking them to Smashburger in lower Manhattan for a meal. I’ve never been to Smashburger nor my kids so this was exciting for all of us. I’ve heard of them before but never came across one. 

We were there to try Smashburger’s new, better-for-you kid’s meal menu which consisted of Grilled Chicken Strips and Musselman’s Unsweetened Squeezable Apple Sauce and a drink. Unfortunately our location didn’t carry kid’s meals and my kids were hungry and I didn’t travel all the way down there to not try something so we ordered smashburgers in which I had the Sin City Burger, fries, haystack onions, a salad and drinks. I was disappointed they didn’t carry the kid’s meal but still made the best out of it and enjoyed everythingthing we ordered. 

We enjoyed eating out at Smashburger and trying good affordable food as a family. I also took home burgers, and fries for my 19 year old son and he enjoyed it as well. We took milkshakes to go. I recently was in the neighborhood and stopped back in to Smashburger to talk to the manager about the kid’s meal. He said it’s coming soon and staff has been trained to prepare and will be put in the system. It will include what I mentioned above. I believe he said it’s coming later this month or this year. Couldn’t remember exact but this post is due way before that so I couldn’t wait. He did let me order the 3-piece grilled chicken strips for the kids to test out. I took it home and they tried it. 

My kids are chicken lovers and they approved of these. The Grilled Chicken Strips are 100% premium all-white meat. I love that. When my local Smashburger get the kid’s meal they can enjoy an entrée, side and drink for a total of $5.49.

Target is one of our favorite stores to shop at and Cherokee uniforms are front and center when we walk in so once the uniforms were found we headed straight for the accessories. This year we were going make her uniform pop with a cute Hello Kitty tutu that we found at Target. The cute socks and ankle boots with blinged hearts are from previous purchases. The Safari dress and blouse are Cherokee from Target and the total for all three items were $44.87 and I saved $8.99. How awesome!! 

She loves her knew outfit and we styled it according to how she likes to dress. She added bracelets for that extra girly look and it matches her tutu. We are showing you a variety of looks of how the safari dress looks with the tutu underneath whether it’s open or closed. The white blouse which is part of her school uniform went great and we popped the collar up. 

As the weather changes we will add in a sweater, scarf, leg warmers and outerwear. Even cute earmuffs would go great. 

Boys also can add a dashing bow tie, suspenders, blazer, beanie, denim jacket or spiked bookbag.
