Mother’s Day Cooking with JCPenney Bakeware

Mother’s Day for me is spent with my family. I know for some it’s a day to relax minus the kids, a spa day or dinner in a fancy restaurant. I enjoy cooking so I will be making dinner for my family a day ahead so we can just heat up the next day and have more time to spend with each other. Leftovers taste great too. I made a sample of baked ziti in my new Certified International Solstice 4.75-qt. Cream Rectangular Baker from JCPenney. This durable stoneware in a pleasing cream color is embossed with metallic trim for a rectangular baker that is oven safe to 450°.

It passed the test. I’ve never had a baking dish this fancy before. I’ve been missing out. I love the detail on my dish and the cream color. This dish just looks so good and baked my dish to a perfection. No leaks or spills, cooked evenly, and held my enormous baked ziti. Easy to clean and store. For just $50 on sale regular $100 you can own one too. Thanks to JCPenney for my early Mother’s Day gift. You really know how to spoil a girl. I think the next thing on the menu is eggplant parmigiana. I can do some major cooking in my baking dish. Link below.

What I like about this tablecloth and napkins is you don’t have to just use it for Cinco De Mayo. It can be used for any party, BBQ or get together. I will get good use out of my set thanks to JCPenney. 

We started our celebration a day ahead and my daughter and I had fun decorating the table with the tablecloth, napkins and lots of great food. It brightened up my table and took it to a whole new level. Take a look at how it went down in the Perez Casa.

My Mother’s Day Wish List from BJ’s Wholesale Club #spon #shoptheclub

Is it too early to be talking about my wish list for Mother’s Day? I think not!! I don’t ask for much when it comes to Mother’s Day. While some want quiet time alone or to go out for Brunch or Dinner I just want to be around my family. I love presents and those I Love You’s no matter what day is it. I also enjoy buying myself gifts. There’s absolutely nothing wrong with that. 

I love the fact that my family and friends can shop for my presents in one place ((BJ’s Wholesale Club) and get everything on my wish list. Wish lists are made instead of reminding a person over and over what I would like. I just put these lists randomly throughout the house or as a text/ email for them to see. 

May 8th will be here before you know it. Even though I tell my children it’s the thought that counts and you can spend whatever you choose and I also accept homemade cards and gifts I love showing them how to use coupons and get the best price for their money. 

Now that BJ’s opened a new store in Riverdale we’ve been quite a bit now and my daughter loves to observe what goes  in  my shopping cart then look through the coupon book that BJ’s send to my house and the coupons in store to match and rip out because she knows we’re saving a lot by using them. She also looks through my wallet for more coupons that I bring with me as well. This is another reason I love shopping at BJ’s. Coupons are my friend.

April is finally here and the trees are blooming. It is also known that April showers bring May flowers . Do you know what else April brings? It brings lots of grilled cheese sandwiches. April is National Grilled Cheese Month. 

I grew up on lots of grilled cheese sandwiches and my kids love them just as much as I do. There’s so many varieties of cheese to choose from and that goes for the bread as well. But for me I am very selective. I’ll try all types of cheeses but I love bread that can make my sandwich taste great and hold all that cheese that I pile on.

Kentucky Fried Chicken (KFC) Major Announcement

Who knows what famous franchise this phrase is attached to? You all should. Kentucky Fried Chicken better known as KFC has been a family favorite for a very long time. Every week my family enjoyed KFC and till this day we still do. 

I recently attended an event and a major announcement was made about KFC. Here’s what was said:

LOUISVILLE, Ky. – April 4, 2016 – In a major announcement today, Kentucky Fried Chicken® made a public recommitment to the standards set forth by founder Colonel Harland Sanders in 1952. The changes enable KFC to offer a taste guarantee today in all of its U.S. restaurants called the “Colonel Quality Taste Guarantee.” The announcement was made at an event in New York, led by KFC U.S. President Jason Marker.

“To everyone who grew up with the familiar taste of KFC and has turned away from us in recent years, you can come back again,” said Marker. “KFC is getting back to the way our founder made chicken – The Hard Way – the right way. We’re ensuring every KFC cook understands the Colonel’s once patented process that helped make KFC the world’s most famous chicken.” The changes – which the company is calling “Re-Colonelization” affect every one of the more than 4,200 U.S. KFC locations and include:  Chicken Mastery Certification – The food in every KFC restaurant is cooked by real cooks, freshly prepared in store every day. To help ensure consistent training across the country, managers and cooks underwent re-certification in KFC’s “Chicken Mastery” program, retraining them in the 25- minute process for prepping and cooking Original Recipe chicken. The process starts with quality chicken raised on U.S. farms, which is hand breaded and seasoned with the Colonel’s Secret Recipe of 11 herbs and spices and then pressure fried.

Colonel Quality Taste Guarantee – KFC stands behind the changes it has made, and to show its commitment to doing things The Hard Way has instituted the “Colonel Quality Taste Guarantee,” which promises customers will be satisfied or the restaurant will remake the portion of their the meal they didn’t love.

KFC kicked off its Re-Colonelization initiative by hosting 43 rallies across the country, with more than 97 percent of its restaurant general managers, followed by a national training event in each and every restaurant in the country – all in an effort to retrain every single KFC employee on cooking the world’s best chicken.

“This wasn’t a media stunt where our restaurants closed for a few hours. Over the past six months we have invested more than 100,000 hours retraining more than 20,000 employees in cooking and serving Kentucky Fried Chicken the way the Colonel intended,” said Marker. “And today is the day we’re ready to welcome you back.”

This is not the first step in KFC’s turnaround, which started in earnest last year with significant reinvestments in updated restaurants, increased marketing spend and new equipment. Specifically, KFC has updated kitchens with state-of-the-art equipment in 98 percent of its restaurants, set a bold goal of remodeling 3,000 restaurants over the next three years, and launched its new advertising campaign featuring a reintroduction of the Colonel.

Re-Colonelization continues KFC’s journey to becoming no. 1 on taste by the end of 2017.

I do appreciate KFC still being around and continuing to keep everyone coming back for more. I do wish they would bring back the Chicken Littles, those were so good. I do miss those but as long as there’s chicken and biscuits I’m good.  

    
    
I enjoyed attending the event and learning how the chicken is made with Chef Bob Das and actress @RachelDratch. I might not have the secret tripe but seeing the process was fine for me. The best part was being served lunch. The chicken just kept coming. I also enjoyed taking a picture with the original suit that Colonel Sanders wore. Grease stains and everything it was the real deal.

I had the pleasure of attending the  Bloggers Breakfast at IHOP. As a fan I was not passing this up. I love the fact that we can have breakfast anytime of day when I walk into IHOP. I also make breakfast for dinner at home but like to treat my family to IHOP. Have IHOP any day. Easter is also a great day to head to IHOP for brunch. Make The Switch to Turkey with Jennie-O and The Biggest Loser (recipe)

Essential to making healthy lifestyle changes stick, is taking small steps and setting realistic benchmarks, a lesson the trainers on NBC’s The Biggest Loser continuously preach to the show’s contests. In the spirit of making small, impactful changes, Biggest Loser trainer Jen Widerstrom taught contestants how to create a nutritious and delicious new Jennie-O breakfast recipe during the episode that aired Monday, Feb. 15. 
If you caught The Biggest Loser last week you saw this amazing recipe made featuring Turkey Breakfast Sausage Chilaquiles with JENNIE-O® Lean Mild Turkey Breakfast Sausage Roll. Created in collaboration with Biggest Loser RD Cheryl Forberg, the recipe puts a tasty, low-cal spin on a favorite south-of-the-boarder dish. Here is the recipe below:

  

Turkey Breakfast Sausage Chilaquiles

 

Serves 8

Prep time 20 mins

Total time under 30 mins

 

Ingredients

 

SAUCE

 

2 (14.5-ounce) cans diced fire roasted tomatoes

1 cup chopped onion

1 roasted red bell pepper

1 cup fat-free low-sodium chicken broth

¼ cup chopped cilantro

1 tablespoon fresh lime juice

2 teaspoons chopped garlic

½ teaspoon chili powder

½ teaspoon ground mustard

½ teaspoon dried oregano

½ teaspoon ground cumin

1 tablespoon chipotle chili in adobo sauce, if desired

salt and pepper, if desired

 

CHILAQUILES

1 (16-ounce) package JENNIE-O® Lean Mild Turkey Breakfast Sausage Roll

48 baked corn tortilla strips

½ cup thinly sliced red onion

¼ cup crumbled low-fat feta cheese

¼ cup chopped fresh cilantro

1 medium avocado, died or ½ cup guacamole, if desired

 

DIRECTIONS:

Sauce:

In bowl of food processor or jar of a blender purée all sauce ingredients until smooth. Pour into a 2 quart sauté pan, simmer sauce, stirring, 3 minutes and season with salt and pepper, if desired. Keep warm. (Sauce may be made 2 days ahead and chilled, covered.) Yield 6 cups.

 

Chilaquiles:  

Cook turkey sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.

Assemble Chilaquiles in shallow dishes or soup bowls. Crumble 6 tortilla chips into each bowl. Top with ¾ cup very hot sauce. Sprinkle with ¼ cup turkey sausage crumbles. Garnish with onion, feta cheese, cilantro and avocado, if desired.

I’m drooling just looking at the picture. I love turkey burgers, sausage and ground turkey and have made the switch from ground beef when making my favorite dishes.
